Microgreens are the first infant seedlings of a plant and studies show them to be between 4-40 more nutrient dense than their adult counterparts and up to 100 times higher in enzymes.  High in anti-0xidants, vitamins, minerals, essential amino acids, essential fatty acids, chlorophyll, sulphoraphane, and beta carotene.  Just a little bit of these greens goes a long way and they are a great alternative to lettuce on sandwiches and wraps, as a topping for soups and salads, folded into eggs, or as a garnish to pizza!  An essential food source multivitamin for anyone looking to improve or maintain good health, especially during the times of year when produce is less plentiful.
